White Chocolate Cranberry Bark

Ingredients:
1 cup semisweet chocolate chips
5 ounces white chocolate, chopped
½ cup dried cranberries, chopped
1 tablespoon finely minced candied ginger
1 tablespoon finely minced candied orange peel

Directions:
1) Line a baking sheet with parchment paper.

2) Melt chocolate chips in a small saucepan over very low heat, stirring occasionally, until smooth. Melt white chocolate in a separate small saucepan in the same manner. Remove from heat.

3) Add cranberries, ginger, and orange peel to semisweet chocolate; stir well. Pour onto lined baking sheet. Drizzle melted white chocolate over the top. Cut through with a knife to swirl.

4) Chill until firm. Break into pieces and serve. Store bark wrapped in refrigerator.



Moist Cranberry Orange Bread

Ingredients 
  • 2 3/4 cups all-purpose flour

  • 1 3/4 cups white sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon baking soda

  • 1/2 cup butter, melted

  • 2 cups fresh cranberries

  • 1 cup mandarin oranges, drained

  • 2 eggs

  • 3/4 cup milk

  • 3/4 cup sour cream

  • 1 teaspoon vanilla extract

  • 1 teaspoon orange extract

  • 1 tablespoon white sugar


Directions
  1. Preheat oven to 400 degrees F (200 degrees C). Grease a large loaf pan.
  2. Combine flour, 1 3/4 cup sugar, baking powder, salt, and baking soda in a large bowl. Add melted butter; stir until mixture is crumbly. Reserve about 1/4 cup cranberries and 1/4 cup mandarin oranges; stir remaining fruit into flour mixture.
  3. Beat eggs, milk, sour cream, vanilla extract, and orange extract in another bowl until smooth. Gradually stir egg mixture into flour mixture until batter is thoroughly incorporated. Pour batter into prepared loaf pan. Scatter reserved cranberries and mandarin oranges atop batter and sprinkle with remaining 1 tablespoon sugar.
  4. Bake in preheated oven for 5 minutes; reduce heat to 350 degrees F (175 degrees C) and continue baking until center of bread springs back when touched, 35 to 40 minutes.























































 

Cranberry Nut Pie

Ingredients:
2 cups cranberries
½ cup chopped nuts
½ cup brown sugar
1 cup flour
1 cup sugar
½ cup butter, melted
2 eggs, lightly beaten
1 teaspoon fresh orange zest
Ice cream, for serving

Directions:
1) Preheat oven to 325°F. Lightly grease a 10-inch pie plate.

2) Combine cranberries, nuts, and brown sugar in a large bowl. Spread evenly over bottom of pie plate.

3) Combine flour, sugar, butter, eggs, and orange in a large bowl. Beat until smooth. Pour mixture over cranberries and nuts.

4) Bake 1 hour 15 minutes. Remove from oven and cool 15 minutes. Serve with ice cream.





Easy Cranberry Relish


Ingredients                                                           Makes 8 servings
  • 1 navel orange

  • 1 (12 ounce) package fresh cranberries

  • 1/2 cup white sugar

  • 1/8 teaspoon ground cinnamon

Directions
  1. Grate 2 teaspoons of zest from orange; discard remaining peel and pith from orange. Divide orange into sections.
  2. Place orange sections, orange zest, cranberries, sugar, and cinnamon in a food processor; pulse until finely chopped.
  3. Transfer relish to a bowl and cover; refrigerate to allow flavors to blend, at least 2 hours.
